Food is often seen as part of a country's identity, with national delicacies often being touted as the 'must try' dish of your holiday.
Hotels and restaurants serving locally sourced food and drink are likely to be serving some of the freshest food in town, simply because it hasn't had far to travel from field, ocean or farm to your plate.
Local produce doesn't need to travel as far as imported goods, meaning that it is friendlier to the environment.
Also, local communities benefit economically by being able to sell their local produce to hotels and restaurants.
So, it's good for the environment, communities...and holidaymakers!
